Indian Panipuri

With my Aussie touch!

Here are some desi panipuris (1 of my favourite Indian street foods) with a healthy twist! I love panipuris and today I treated myself to panipuris with a dash of protein in it; post workout! All you got to do is replace the mashed potatoes (as served in the original street food) with some protein rich kingfish scramble, charred corn kernels, finely chopped parsley leaves and stuff the mix into the crispy shells. Pour some tamarind-flavoured pani (water) into the puri (shell) and lose yourself to the burst of flavours in your mouth!!!

 

 

Ingredients

  • 16 piece panipuris
  • 100 g kingfish, finely diced
  • 1/2 onion
  • 1 clove garlic
  • 50 ml white wine
  • 1 tablespoon butter
  • pinch salt
  • stalk parsley, finely chopped
  • 50 g corn kernels, charred
  • 50 g cucumber, finely chopped
  • 1 cheek lemon, squeezed
  • tamarind and mango pulp
  • 50 g tamarind soaked
  • 50 g mango juice
  • ¼ mango, finely chopped
  • pinch cumin, ground
  • pinch salt
  • pinch sugar

Preparation

01. To make the tamarind pulp, toast the cumin in a dry pan over medium heat for 30 seconds, stirring occasionally, to release the aroma. Put the toasted cumin in a bowl with the other ingredients and 125ml water. Using a stick blender, process until smooth. Add 400ml water, and blend again. Chill for 1 hour.

02. Meanwhile, sauté onion and garlic with a drizzle of ghee on low heat until translucent (5-7 minutes). Add kingfish and cook through (2 minutes). Mix with the remaining filling ingredients. Add salt to taste.

03. Crack a small hole in the centre of each puri with your thumb (or the handle of a small spoon) and fill in the kingfish scramble, then add 1⁄4tsp each of dressing and serve.
