Given my love for travel and picking up cooking hacks from the places I visit, here’s a super easy veg recipe Japan taught me!!  This super easy sautéed veg recipe is below.  If you’re using a different firmer veg like pumpkin or eggplant, just simply steam with the lid on for a little longer….so yum!!

Ingredients

  • 400 g Asian mushrooms (or what ever vegetable you want to use)
  • 2 tablespoons mirin
  • 2 tablespoons soy
  • ½ tablespoon butter
  • pinch salt
  • pinch garlic powder

Preparation

01. In a super hot pan add a drizzle of vegetable oil, toss through the mushrooms really quickly, add the soy, mirin and butter, sprinkle with garlic and salt. Pop the lid on and steam for 1-2 minutes and vwalla perfectly cooked vegies every time with such a delicious hit of flavour!

Recipe Tip

(if you are cooking harder vegies like eggplant or pumpkin, the cooking time will be slightly longer. Here I’ve served with some pickled radish..yum!
